Birthday Dinner!
Sunday was chock full of wins in the kitchen (even though our boys couldn't deliver on the ice) and antioxidants!
Friday evening happy hour had turned into happy 5 hours and near the end I promised my friend (who is also a teaching assistant for the professors of manhood) a gourmet vegan meal for his birthday. Luckily, I was halfway through preparing roasted beet risotto for the week when he called to ask what time he should arrive!
I whipped up some creamy carrot bisque that warmed everyone up for the coolie ginger kale and that risotto I was talking about.
Most of the day I just stared in awe at the pretty colors splattering all over my kitchen- bright orange, deep pink, and dark green; I can't believe I didn't think to get a picture!
